Kitchen boards are made from wood that has been cut parallel to the grain of the tree. They are thinner and usually more manageable than chopping blocks.

Butcher blocks are made from wood that has been cut across the grain of the tree. This type of processing is called end grain or end grain. They are stronger than kitchen boards and can be sanded more often.
